My name is Brittany Wood Nickerson. I am a long-term student of herbal medicine, a lover of nature and an enthusiastic cook! My goal is to help people and the environment by bringing nutritionally dense food into our lives.
I believe that the food we eat every day is our largest health asset and the best preventative and curative medicine that there is. Through Thyme Herbal I have set out to create a curriculum of classes and a community of learning that will educate anyone who is interested in the healing potential of food. Ranging from the most beneficial preparation techniques to the health qualities and uses of certain foods, herbs and spices, these classes are designed to accommodate the enthusiastic cook and the kitchen-hater alike. I am passionate about saving the world through a healthy and sustainable diet and am devoted to making it all start in your own kitchen!

My Food Philosophy
My philosophy on health and nutrition is strongly influenced by the holistic lifestyle approaches of Western Herbalism, some Aryvadic healing traditions and the nutritional philosophy of the Weston A. Price Foundation. Lifestyle, nutrition and ecological sustainability all play integral roles in my vision for health, vitality and peace.
Lifestyle Goals:
- To revitalize rituals around home food production and consumption including cooking and eating together.- To make cooking and eating nutritionally dense foods a daily practice and a way of life.
- To slow down and enjoy the process of growing, preparing and eating and to embrace food as our sustenance.
- To realize that as individuals we are the stewards of our own health and must learn the patterns and nature of our own body to heal.
Nutritional Goals and Practices:
- To support and foster a diet rich in: - Sprouted and fermented whole grains, nuts, seeds legumes and dairy products
- Fresh, local vegetables and fruits
- Medicinal herbs and spices
- Natural plant and animal fats
- Bone marrow and mineral dense broths, stocks and stews
- Free range and grass fed meats
- Natural, raw, unprocessed sweeteners
- To avoid all processed and refined foods, pasteurized dairy products, genetically modified industrial food crops, and commercially produced meat.
Environmental Goals:
- To remain connected to the process of food production by buying local and direct from farms and growers, visiting localfarms and planting your own garden.
- To commit to conscious consumption of local, organic, GMO free produce, free-range meat and dairy and sustainably harvested wild seafood.
- To reduce, reuse, recycle and compost whenever possible.
- To ride a bike!
